I also went to Trader Joes to

I do sunbutter because I can
get organic sunflower seeds for around $ 3 / lb but organic pre made
almond butter is $ 15 / lb or
more.

get through, I have quite a bit to work with.
1/4 cup unflavoured whey protein 1/4 cup ground
almonds (plus a bit extra, if you need to dry out the mix later) 1tbsp high protein nuts n
more white chocolate peanut
butter 1tbsp coconut flour 1 - 2caps valencian orange oil (mine came from Asda) 1 - 2tbsp water (add a little at a time so that the mix doesn't
get too wet & sticky) 7 drops vanilla flavdrops zest of half an orange 50g white chocolate 6 flaked
almonds
If the dough is a bit too dry, add
more almond butter to
get just the right consistency.
*** Variation 1: I used hazelnut
butter instead of
almond butter & subbed a tad
more honey for the stevia (which we can't
get & don't use).
It doesn't
get more simple and nutritious than an apple with some
almond, cashew or peanut
butter.
But when it was mixed up, the batter seemed too runny to be cookies and I was in a hurry and didn't want to fiddle with adding
more almond butter or eggs to
get it thicker, so I just went with muffins / cupcakes.
ETA in response to reader requests: If you've
got nut allergy issues (in your family or at school), swap the
almond butter for sunbutter, and the sliced
almonds for a bit
more rolled oats and quinoa.

got mine from Amazon - they call it also «creamed coconut» - search for» Tropical Sun Premium Creamed Coconut» on Amazon Normal
butter would not work but you can use
more nut
butter instead (
almond or
almond & cashew).
You may need to add a few drops
more to
get the chocolate to level above the bump of the
almond butter.
And if on one of your
more frazzled days you end up throwing together
almond butter and jelly sandwiches for dinner, do it with a guilt - free conscience; just try your best to
get something raw and fermented into everyone's mouth before the meal is over and let it go!
Knowing how
almond butter gets warm (borderline hot) during the
butter - making process, and how adding a liquid sweetener tends to make it sieze up, adding
more processing time to
get it back to a creamy consistency, I opted to add maple sugar instead.
