GF 1 - to - 1 flour mixes are only interchangeable with wheat - based recipes and not almond flour + coconut flour recipes.
My old vegan / gf pancake recipe that I used to make a lot uses almond flour, flax, and coconut flour.
The cookies are made with no butter or refined sugar and the recipe uses white whole wheat flour (could easily substitute GF flour or coconut, almond) all which make it a healthier, low calorie treat.
