I made no variations at all and it was great the next day which usually isn't so great
with GF pasta.
I added 1/2 of a cooked sweet potato to the sauce (just because I had to it left over from the other day) and
used GF pasta shells.
I've discovered the secret to
making GF pasta at my house is to add a tablespoon of oil to the water before it boils.
A tad chewy and does seem to stick together more than
other GF pasta, so be aware to stir it more while cooking.
Easily the
best GF pasta I've ever had... and therefore the best pasta I've had in over 3 years.
Add to that the fact that I
need GF pasta, and zucchini noodles become a healthy, every day option!

Somehow our local market manages to supply really good Cretan tomatoes that have a smell and taste even in February - March (and they sell also really good

I did not do this for the GF dough, I just cut it into 4 equal pieces and finished the rolling out by hand, just because my pasta machine has had a lot of regular flour and I didn't want to contaminate

My main issue with
the GF pastas is that they don't seem to work well in salads and, as someone who lives in the hot and sticky South, pasta salads used to be a main stay of our Summer.

I really like the Barilla pasta that Nicole mentions, and have used it for cold salads, but after 24 - 48 hours in the fridge,
the GF pasta gets dry and almost brittle.
I'm thinking of adding cooked quinoa or
gf pasta to add more substance the next time I prepare it.
I heat it all back up, squeeze 1/2 a lime over it and serve over
GF pasta with Extra Virgin Olive Oil drizzled on it and top with fresh grated parmesean cheese.
