I know it works great with butter or
ghee so coconut oil should be fine too.

coconut oil is on high rotation in my kitchen,
so I'm covered there, but I've recently been adding more variety to my fats by mindfully incorporating things like avocado, flax / other seeds and nuts, and
ghee into everyday meals.
The third ingredient is
coconut butter,
so it's basically a surge of
coconut flavor, with a butteriness to it from the
ghee.
I used
ghee instead of
coconut oil,
so I don't know if that made the batter more wet.
I have a milk allergy (but
ghee doesn't bother me)
so I was going to try replacing the butter with
ghee and the heavy cream with full fat
coconut milk.
I made them with a few modifications: I subbed
ghee for
coconut oil, and daughter hates bananas

coconut oil, an animal fat or
coconut butter.
