When the amino acid sequence is homologous between the target
antigen, such
as gluten, against which the immune system is mounting a response, and tissue proteins, such
as the thyroid tissue, a case of mistaken identity occurs, and the immune response can become directed against self tissues, manifesting
as autoimmune disease (Hashimoto's thyroiditis in this instance).
Unfortunately, most people don't feel better immediately after eliminating
gluten from their diets
as it may take 30 to 90 days for the inflammation to subside and the
gluten antigens to be eliminated from your body.
