The potential disadvantages of many
glutenfree flours are similar to those of any refined flour: too much starch, too little fiber, and a lack of important vitamins and minerals.
It's a fun challenge baking gluten - free but my kitchen cupboards are packed enough as it is without adding a whole load of different
glutenfree flours and starches.
