I lived off this recipe the two times I did Whole 30... and it's still one of my
favorite go to meals today!
This vegan chickpea sweet potato stew is a quick, low fat and nutrient dense meal that is a
great go to meal during the colder months.
It takes about a month, but once you have a bunch of
frozen go to meals it makes it a bit easier!
My goal is to cook once, and have a fridge and freezer full of
healthy go to meals for the week and sometimes a month.
My
favorite go to meal is grilled vegetables (outside), grilled sweet potatoes and some kind of fish.
My favorite
go to meal when entertaining with little to no time for prep: Appetizer: Hot Artichoke Spinach Dip, celery sticks and broken up Lavosh (I buy the lavosh if I'll have limited time) Salad: Large green salad with tomatoes, thin sliced red onions, black olives, parmesan cheese and italian dressing Main Course: Mix of Cheese and portabello stuffed tortellini (Buitoni's refrigerated, takes just a few minutes in boiling water!)
