go with our curry we had for dinner last night and they are amazing!

go with the curry I'm now planning for tonight's dinner!
I needed something other than rice to
go with curry pork tonight and these were exactly the perfect pairing!!
Luckily I had cooked up some brown rice to
go with the curry.
In terms of spices, I had to
go with a curry theme.

curry) that calls for a similar quantity of carrots and 1 lb of sweet potato, so will
go with that weight.
Lentils are a
go - to for me... I love simple
curried lentil soup (veg broth, diced onion, mushroom,
curry powder, cumin, garlic, and lentils + any add - ins you like... squash or potatoes help add bulk to it, I like adding spinach or kale, tomatoes add a nice acidity...) or an even simpler cold lentil salad made
with red onion, diced tomatoes, lentils, chickpeas, and lemon juice / vinegar / EVOO.
Instead, I just
went with already jarred
curry paste and it was fantastic nonetheless!
This
curry paste became a
go - to condiment for me (try adding it to olive oil and herbs, combine
with coconut cream... yum!).

In Southern parts of India, an everyday staple in most homes
goes like this: prepare seasoning in ghee / clarified butter or oil, a bit of mustard seeds, cumin, dried red chillis (can be substituted
with paprika), crushed garlic or asafoetida and a sprig of
curry leaves.
I'll
go with a milder
curry powder next time.

went for extra protein
with the Peanut

with tofu, white onions, green and red peppers, and Thai
curry sauce
