goat cheese Dressing: 1/4 cup lemon juice 1/2 tsp lemon zest 1 tsp cumin 1 tsp chipotle chili powder 3 Tbsp olive oil
Drizzle
goat cheese dressing on top to serve.

As I peeled and segmented each one, I collected the juice in a bowl to save for the
dressing in this citrus salad with smoked almonds &
goat cheese.
Add some crumbled
goat cheese and chiffonade several leaves of basil (just a fancy way of saying roll them up and then cut into thin strips)
Dress with a vinaigrette of balsamic vinegar (white balsamic is a nice change) and olive oil.
Also used the combo in a sandwich: sliced beets, arugula,
goat cheese with a drizzle of
dressing on a homemade ciabatta roll!
Dress up brunch or dinner with a batch of buttery scones made with sun - dried tomatoes, kalamata olives and crumbled
goat cheese.
