goat cheese salad on the side, it was a delicious meal.

I am a huge fan of
goat cheese - I just can't get enough of the stuff,
on crackers, in
salads, and even in my cheesecake!
I used spinach as my greens
on this
salad, just because I love spinach, and it works really well with the
goat cheese and honey mustard vinaigrette.
I put the
goat cheese and toasted walnuts
on the
salads individually, so the beets and apples were able to soak in the dressing and made it even better
on day two!
To make the
salad add 2 cups of bagged spinach into a shallow bowl, thinly slice 1 small red onion and add to bowl, thinly slice 1 ripe tomato and add to the bowl, crumble about 4 ounces of
goat cheese on top and toss in 10 walnuts, season everything with sea salt and freshly cracked black pepper and drizzle in the honey mustard vinaigrette

I love asparagus and
goat cheese together so I decided to create a twist
