goats cheese salads get me so excited!

I am a huge fan of
goat cheese - I just can't
get enough of the stuff, on crackers, in
salads, and even in my cheesecake!
I love
cheese in my
salads but thought this would
get a bit gunky so I made an amazing
goat cheese dressing and put it in the bottom of the jar.
My mom
got the Strawberry Chopped
Salad, which has snap peas, fennel,
goat cheese, walnuts, and a balsamic vinaigrette.
Hearty kabocha squash
gets dressed up as a filling «wedge
salad» with sweet and savory flavors of dried figs, wilted spinach and creamy
goat cheese.

get into a
salad rut anymore, and I experiment with interesting ingredients, such as fresh herbs, navy beans, lentils, sprouts, kiwi slices,
goat cheese, macadamia nuts, pumpkin seeds, and falafel.
