This past week, I didn't have anything prepped for
breakfast and it really made a difference (
in a not
good way)
in my
mornings, and Ben hits the drive - thru more often when I don't have something ready for him to grab
in the fridge.
When my husband (Steve) spots the crazed look
in my eyes as I walk through the door after my Saturday
morning long run, he knows his
best line of defense is to start cooking
breakfast.
I had actually made it for
breakfast one
morning, inspired by a recipe I saw
in an older issue of
Good Food magazine and I liked it so much, I kept making it again and again during the following weeks.
This
morning, after I realized a yawning void on the bread end, I threw the pizza plans for the evening out the window and decided to use my last yeast block
in favor of a proper
breakfast including...
well, I wasn't exactly sure on what to do with it but had a vague notion of a sweet yeast roll or similar
in mind.
My son had two neighborhoods brother friends for a sleep - over last night, so I made French Toast Frittata with the coconut flour bread for
breakfast this
morning (sliced or broken bread soaked
in 5 beaten eggs, a
good «glug» of raw whole milk, cinnamon, nutmeg [there is a higher egg to bread ratio than
in conventional French Toast] all poured into a hot buttered sauté pan, cover and turn down heat to medium - low, cook until nearly set, place pan
in 350 °F oven until eggs are completely set on top and starting to brown, about 6 - 10 minutes usually, flip over onto large plate and cut into wedges for serving).
Again, all is about balance
in your life, and all this starts from the
morning with a
good breakfast.
