I just started baking with GF
flour and I'm not entirely used the texture of GF baked stuff so I did feel there was a little more
substitute - y feeling but it was still really really

For examples, you run out of rice
flour, you can
substitute the same amount of sorghum or quinoa
flour and you'll get a similar resulting baked
good (though probably a different flavor as each
flour has it's own flavor profile).
But if I don't have either of those in my fridge I
substitute with an additional 1/2 cup of cream and add a tablespoon of
flour to bind the batter together
better.
I do know that regular
flour and coconut
flour are not a 1:1
substitute so it may not turn out as
well.
It can be
good substitute for almond
flour, which is pricey, not to mention off - limits for those of us who have nut allergies.
I have done some substitutions, such as adding 1/2 almond and 1/2 walnut

flour substitutes that I can think of that would be similar for this and not be coconut
flour or almond
flour would be sunflower seed
flour and flaxseed
flour but you said they were nut and seed free so I suppose that won't work.
Rice
flour is actually a very
good substitute to wheat
flour, as it is neutral in taste (on the contrary to almond
flour which has a strong almond taste), with a quite similar texture.

best substitute we've found for pancakes is rice
flour or a combo of rice and almond
flour with a little xanthan gum.
Many gluten free pie crust recipes use sweet rice
flour (check your nearest Asian food store) and that might be a
good substitute option as
well.
In most cases it is
best used as a
substitute for a portion of the existing
flour in the formula, adding a complex and unique flavor.
