But I try and be
better organized and have healthy vegan

meal options I came up with had to be: # 1 things that would be fairly easy to prepare (I wasn't about to take an extra hour on Sunday to make something elaborate), # 2 had to be foods I could easily manipulate the nutritional profile for (ensuring a balance of protein, carbs, and fat), # 3 the food had to store
well in the fridge or
freezer, # 4 they had to reheat
well in either the toaster or microwave OR be eaten cold right from the fridge, and # 5 ideally, they needed to be things she could easily eat in the car on the way to school (remember, it takes us at least 20 minutes with no traffic to get to school so eating in the car gives us even MORE time to sleep lol).
I adore
freezer meals as
well!
Even
better, this dish is one of my favorite, week - night
meals and can easily be made ahead of time, popped in the fridge or
freezer, and warmed up in a flash.
Having a
well - stocked
freezer and pantry means you'll have go - tos for proteins and sides, and the greater the variety of these items = a greater variety of
meals!
You can use the ground meat of your choice - sometimes I opt for pork, or turkey, or even beef depending on what's available in the
freezer - and when added to whole grain pasta and beans it's a
meal I feel really
good about serving.
These are healthy, quick cooking,
freezer - friendly, and make a mighty fine weeknight
meal that feeds the family
well in a short amount of time.
One thing I do that helps with successful
meal planning for my family is keeping my
freezer well stocked with healthy choices.

I also tend to keep leftover aquafaba (chickpea cooking water) in the
freezer for occasions that call for quick crepe
meals like this one, but if you're partial to eggs and / or have flax or chia, those options work as
well.
That saved me from having to make another
freezer meal all together which is
good since I'm pooped today!
It is perfect in so many ways: gluten free, so easy to make, stores
well in the
freezer, and it's a little bit healthier than the average dessert thanks to almond
meal and the fruit.
If I know a particularly busy time is coming up, I'll make sure I have a
good supply of pizzas along with my other
freezer meals to see me through.
Serve leftovers, plan on having a few
meals in the
freezer ready - to - go (try this Cincinatti Chili), make slow cooker
meals (two of our favorites are Black Bean Turkey Chili and Jamaican Chicken), repurpose leftovers (this is a
good one ~ Triple Cheese Chicken Pasta Bake), make recipes that reheat easily (another family favorite ~ Turkey Bolognese), and have a handful of tried - and - true recipes (this is the easiest recipe ~ Tomato Paste Pasta) you can count on.
There's nothing
better than making some delectable dishes for the remainder of the week, or stashing some pre-made
meals in the
freezer for another busy weeknight.
I was kinda doubting that these would be any
good because I have made other «
freezer»
meals that haven't turned out so
well.
