I know better than to dump a vinaigrette over a perfectly
good piece of salmon.

salmon, he also brought home a
good amount
of Black Bass (from the Rock Fish Family), 3
pieces of the highly precious Yellow Eye (also Rock Fish, but very limited supplies limit catches to 1 fish per person, per year), a LOT
of Halibut, and even some King
Salmon.
For the
salmon, perhaps it might have been
better to steam it as a whole instead
of in small
pieces, to make it firmer.
Then just shred the sprouts (some stores have bags
of shredded brussels sprouts), slice some green onions, a little red bell pepper for color, toss in some chopped peanuts, top with a
piece of grilled
salmon and your
good to go.
Place
salmon on a
well oiled rack or a
piece of aluminum foil that has been sprayed with a non-stick spray.
What am I like - these sound the
best though — I do love a nice
piece of smoked
salmon.
Mix cooked wild
salmon (canned works
well) with finely diced onion, breadcrumbs, beaten egg, and small
pieces of boiled potato to create patties.
All that's left for me to do is throw a
good source
of protein on the side, such as grilled chicken, a juicy beef patty, a few tasty meatballs, some delicious braised meat, a few slices
of leftover roast, a handful
of cooked shrimp, a
piece of grilled
salmon, some scotch eggs (or even plain hard boiled eggs) or, if I'm really in a pinch (or caught completely unprepared) canned tuna fish.
