We both agreed that there is nothing better than
good sweet corn, eaten right off the cob.
I love all things creamy and can't resist
a good sweet corn dish!
If I could get my hands on
some good sweet corn, I would make this in a heartbeat — but, go figure, here in the heartland the sweet corn tastes like feed corn.
You want to use some really
good sweet corn, and some vibrantly red, vine - ripened tomatoes (no heirlooms here).
Summer's
best sweet corn is sweet, succulent, and the stuff late - January dreams are made of.
Even so, the faba bean residues alone did not provide enough nitrogen for
the best sweet corn yields.

This tart, with its whipped cream - cream cheese filling and and dark purple blueberry and
sweet corn topping, sounded like maybe it wouldn't take
well to four days in the fridge as we whittled down a large version.
It has the
best parts of grilled
corn — the
sweet flavor and the buttery texture — without any of the downsides of eating
corn on the cob, such as looking like a damn beaver with rabies when you attack a
corn on the cob with your mouth and having to floss immediately afterwards.
If you do make this tart, trust me on that layer of sugar, it enhances the taste of the
corn, which always tends to go
well when it's more on the
sweet side of the taste spectrum!

best friends here in Buenos Aires, Mechi (the girl who made Val and I the
sweet corn tart back in August), came over on early Thursday afternoon, with ingredients to bake my birthday cake.

There is roasted

I tweaked the polenta a wee bit just because of what was available in fridge... carmelized some

corn... then finished with low fat cream cheese for the marscapone... a wee bit of fresh parm as
well.
The
sweet of the potatoes was a nice contrast to the spicy salsa, and the
corn on the cob we had on the side was
well worth the flossing effort later on.
Now add the wet mixture on top of the
corn (keeping the heat low) and let the water evaporate while mixing the
corn well to get a nice

sweet potatoes, and asparagus during cooler months, and chopped cherry tomatoes, diced red pepper,
corn, and grilled zucchini / squash in the Summer.
And when you toss in healthy black beans,
sweet corn, crunchy bell peppers, savory enchilada sauce, and top it with cheese... your party just got
better!
First bag together and shake until very

corn flour (This helps tenderness - is hard to find - very very fine cornmeal) Finally, add and mix / shake
well: 8 cups unbleached all purpose flour, 2 pounds

My first thought was «in a crock pot with brown sugar, cinnamon, & marshmallows» then I realized that wasn't the
best way to «improve» my health... sugar and high fructose
corn syrup are not the answer, but
sweet potatoes and cinnamon were a
good choice.

I used
sweet yellow
corn for this recipe and I think the sweetness of the yellow
corn balances really
well with the smokey and sometimes unexpectedly spicy roasted poblanos.
The
sweet onions,
corn and tomatoes, paired with the homemade pizza sauce and feta cheese, were seriously so
good on this oddly green pizza crust.
For one, it includes some of summer's
best produce: bell peppers,
sweet corn, and jalapenos.
