a good veg stock.

I've not tried this with
veg stock, however it's the coconut milk which works so
well with the tomatoes to create the
best mix of flavours and consistency!
So far so
good — I added some
veg stock to help it along.
Add the
stock, tomatoes, herbs and lentils stir
well, cover and simmer for about 20 minutes or until the
veg and lentils are soft.
4 slices bacon (this is optional but the smokiness is wicked
good)
veg oil / olive oil 1 medium Spanish onion, diced 2 stalks celery, diced 2 small sweet potatoes, diced 1 ″ thick 2 sprigs fresh thyme 3/4 tsp smoked or regular paprika 1/2 tsp chili powder 1/2 tsp cumin 1/2 tsp dried oregano 1/2 tsp sea salt 1 1/2 cups corn kernels (frozen or fresh) 3 tbsp all purpose flour 2 cups
stock 3 cups 2 % milk
