I am a Canadian now living in the U.S., east coast side, and apart from the
little dry - looking mini
tarts at the grocery store I haven't seen an honest - to - goodness
gooey butter
tart here and I've missed them so!
The filling used here is a
little different than what I used for the Butter
Tarts as it contains light corn syrup which makes it slightly soft and runny (
gooey).
For this one in particular, I choose to use a perfectly ripe banana for a
little natural sweetness, some
tart goji berries, and raw cacao powder to accompany the
gooey chia seeds.
