Here's what I've dreamed up so far, and it's damn good: I stuffed big,
gorgeous poblano peppers with queso fresco (let's not kid ourselves — poblanos need cheese).
A recipe for
gorgeous poblano peppers stuffed with Cajun seasoned shrimp, Manchego and goat cheese, and basil, then baked or grilled.
As a result, when I saw
these gorgeous poblano peppers calling my name at the grocery store, I couldn't resist stuffing five of them in my bag without a clue as to what to do with them.
