Ive heard of making
pickled eggs with the liquid from
pickled beets before to
get a dark pink color...
But her
pickled beets were stellar and I have called her on many occasions to
get the recipe.
These
pickled beets will keep about a month in the refrigerator, but eat them within a week because they
get very overpickled!
For way less than that, I was able to make this delicious
pickled beet salad, which yielded so much more than I would have
gotten in that jar.
What I
get: Greens and grains bowl with half super greens and lentils OR greens bowl with a mix of baby spinach and super greens / / dips: eggplant and red pepper dip, harissa and red pepper hummus / / protein: a mix of grilled chicken and falafel toppings: cabbage slaw,
pickled onions, cauliflower tabbouleh, tomato and cucumber salad, raw
beet and dill salad, fresh mint, extra romaine / / dressing: spicy turmeric tahini
I served mine with organic
pickled beets... (keep
beets in the fridge in mason jars at all times in case you
get really hungry and you want something right now, but keeps you on track with eating heathly and low calorie) adding only 50 calories for 1/2 cup.
