gotten crazy this week!

Seriously, a couple of
weeks ago things
got so hectic and
crazy that I didn't have time to shower for three days.
Finally
got around to putting together a Mealtime Monday These past few
weeks have been
crazy busy.
First, I went a little
crazy after being on vacation for a
week and HAD to
get crackin» on more recipes for Down South Paleo with my deadline fast approaching.
You hate it when you
got ta do it, but you love it when it's all over and dinner is already made for you during a
crazy week.
It can be stressful and overwhelming, and I'm in the middle of a
crazy week welcoming teachers back and
getting them set up.
I usually eat it with yogurt and fruit, but last
week, I
got a little
crazy and bypassed the breakfast option in favor of cookies.
So when I
get back into town and barely have enough time to throw in a load of laundry, let alone meal prep my typical veggies and salads and grains before the work
week begins, you KNOW I'm putting together some
crazy simple meals to
get me through the
week!
Sometimes I
get crazy with my avocado toast if I've done some meal prep for the
week and actually have sauces and other stuff on hand (pesto, roasted chickpeas and sweet potato hummus are my fave toppings).
This
week is going to be pretty
crazy at school — I've
got a professional development conference after school until 7 pm Wednesday night, then the next day is parent teacher conferences which go until past 7 pm — talk about a couple of long days!
We are used to having a little bit of a cold winter here in the DC area but we do not usually
get slammed with
weeks of
crazy single digit temps.
When it all
gets crazy - busy again, at least I'll have a easy meal to
get me through the
week.
After
weeks of putting up with my
crazy appetite issues and digestive health conversations my husband was
getting fish!
I came up with this Tuscan Kale, White Bean, and Turkey Sausage soup, and it was the perfect thing to
get me through this
crazy week.
It's amazing how much
crazier the
weeks get when the kid's activities start....
I've also been baking like
crazy trying to
get this blog so that it can function without me for a
week.
Get your popsicle mold ready because you're going to be craving pops like
crazy after the
week is through.
And I have made it a goal to use these
crazy kitchen appliances I buy or else I have to
get rid of them >> update: I just bought a bread machine and if I don't use it a few times a
week, it's going to
get the boot.
Oh girl do I ever know what you mean:) I could use a batch of these to
get through the rest of my
crazy week.
Some of the
crazy goodies I have been dreaming up will have to wait another
week and for today you
get an oldie and goodie.
Plus

week so I recommend you make a batch, if for no other reason than to make it to Friday.
I did not go as
crazy as the meyer lemons a few
weeks ago but I did
get two bags and the first thing I made was this coconut key lime panna cotta.

I thought that those stages were all really, really fun experiences and I don't want it to

weeks which I think honestly parenting newborns is kind of tiring at the beginning and parenting two newborns is tiring, however, you feel like feeding them is you know it's a little
