I agree with Penny, although I love whole
grain crunchy
bread, sometimes I want a smooth delicious soft white
bread which makes yummy toast
too.
A couple of slices of whole
grain bread are a good option
too.
I love this combination of whole
grains — I think all
breads need some plain white
bread flour or they become
too dense — but you can experiment with all different kinds of
grains and flours by weight if you wish.
Favorite
bread: super sour / San Francisco style sourdough, Favorite baked sweet: yellow cake with fudge frosting I haven't gone
too far into whole
grain baking, so I'd have to say that wheat is my favorite!
It's a winner here I'm wanting to look at the all potato
bread too, as I'm trying to get farther away from so many
grains, but wow..
In the kitchen, if
bread doesn't rise, I repurpose it into crackers; if vegetables are
too spicy, I stir in yogurt to cool them down; if a
grain bowl is
too salty, I add more rice and water.
I've tinkered with this
bread to get it just how I like it - not
too sweet and made with whole
grain flour.

Hydration is just a number — numbers in the 70s (80s for whole
grains) make great
bread, don't get
too worried about it.
I would love to get one of their
bread makers but this
grain mill is awesome

breads, this recipe is also nut free, which is a nice change and perfect for allergies / sensitivities
