I'm not sure how it would work with quinoa
flour as the consistency is different, I'd recommend
doing it with the pure
grain as I know that works but if you
do try it with the
flour I'd love to know how it turns out!
I would really like it if you could
do a few desserts using this
grain or its

The whole wheat
flour and wheat germ don't carry them to health food status, but they
do add fiber and antioxidants from whole
grains, and a signature...
BUT (and a big BUT here) it CAN be a rewarding nut free +
grain free alternative to baking with coconut
flour all the time — which is what you'll probably find yourself
doing if you need to avoid nuts.

do not have access to a baking scale, cup measurements are provided, but be aware it is very easy to over measure
flour, especially whole
grain flour.

Substituted a couple things for what I

did not have — vegetable oil for the coconut, an equal mix of AP, 10
grain & rye
flours, knocked the maple syrup to 1/4 cup, and added a 1/4 cup of dark chocolate chips.

did not have oat or almond
flour, so I just swapped those out for a total of 2 cups of organic, GF long
grain brown rice
flour.

flour isn't exciting enough, let's explore other things your
grain mill can
do!
I find that refined
flours work better here because they
do a better job of nurturing the starter without adding as many competing organisms as we'd get from a whole
grain flour.

does it help this be healthier (so I can put a whole lake on my mashed potatoes) but it helps it be
grain free and extra delicious because instead of taste-less
flour, it uses mushrooms and onions that have slow cooked with the turkey to bring even extra flavor goodness.

flour, see if you can find someone who
does or just get the freshest
flour you can find.
I am tired of
doing so much GF baking with
grain flours and starches and have wished and wished I could use almond
flour.

do grind all my own
flour (my husband calls me the little ten hen), it sounds like madness, I know, but I have this awesome fancy grinder that is so fast I think I only add about an extra minute (and in that I am including the time it takes to walk over to my
grain buckets, remove the lids and scoop out the
grain with the actual grinding time) to my baking times and we get this amazing, fresh
flour.
