grain puffs, chia or flax seeds, and various nut butters.
However, if you have diabetes / pre-diabetes and you are including bananas
as part of a whole meal then I would just balance them with some healthy fat (avocados, nuts, etc.) You could have a banana on top of a piece of sprouted whole
grain toast with some almond butter and that would be a good option.
As this
grain free zucchini banana bread is quite soft,
toasting in the pan just makes for easier handling all round.
My tips for quinoa are (1) soak quinoa in cold water beforehand to get rid of the bitter taste; (2)
toast your quinoa — it tastes nuttier; (3) use a bit less than a 2:1 liquid:
grain ratio,
as more water makes for soggy quinoa; (4) cook in vegetable stock instead of water and add in flavorings like smashed garlic, peppercorns and fresh thyme or rosemary sprigs.
