This loaf has levels of texture from the diverse
grain mix, including a crispy crust and a mixed crumb from the cracked
wheat berries.
I ran through the usual gamut of add - ins: cooked
grains like barley, bulgur
wheat,
wheat berries, and farro, as well as nuts including peanuts, macadamia, pistachio, walnuts, and pine nuts.
It's a lovely, nutty
grain (heirloom / ancient) as described and I'd like it in texture to
wheat berries.
Other
grains you can use: brown rice,
wheat berries, cracked
wheat, pearl couscous, or wild rice.
My favorite was the Go Go Goji (chopped kale, carrots and red cabbage with red adzuki beans, goji
berries, cashews, broccoli, cauliflower, black sesame seeds, green tea matcha dressing) and the Power
Grains (organic spring mix, carrots and red cabbage, raisins, almonds,
wheat berries, quinoa, orange vinaigrette).
The result is a chewy, tender
grain that packs a punch: a serving of
wheat berries has triple the fiber and twice the protein as brown rice.
It was leftover — use any leftover
grain that you have like brown rice,
wheat berry, couscous and so on!
To make whole
wheat flour, we purchase the
wheat berries and grind in our electric
grain grinder.
I just made it again, this time adding a
grain (
wheat berries) for added texture.
It is stone ground from non-GMO whole
grain white
wheat berries (instead of more traditional red
wheat berries), with the bran, germ and fiber all in there.

I used semi-pearled farro here, but you can certainly substitute whole farro,
wheat berries, barley, or other plump
grains.
It is a whole
grain wheat, similar to
wheat berry, that is often sold in different grades depending on the size of the kernels or how finely or coarsely cracked they are.
Lately, I've been on a kick of cooking with ancient
grains, like, our favorite simple einkorn
wheat berry salad or southwest quinoa salad with chipotle dressing.
Raspberry & Feta Salad with
Wheat Berries — This salad features cooked
grains atop a green salad to provide loads of minerals and soak up flavors from the dressing of your choice.
Have a look in the bin section at Whole Foods, if they don't happen to carry the
wheat berries at that particular location, go for something similar - barley, pearl barley, a plump whole
grain rice, etc..
For serving: 4 cups any combination of cooked white rice, brown rice, quinoa,
wheat berries, barley, farro, or pretty much any other
grain avocado (optional) parsley, chives, or cilantro for garnish (optional)

After the funnel has been cleared, be sure to mill enough hard
