Some tips: I like baking with
granny smith apples since they don't break down
in the oven, they really hold their shape.
The recipe requires tart
apples — so
granny smith are a perfect fit, but if you are
in India and can get hold of Maharaji
apples — there is nothing better for this dish than those.

Great juicing staples include celery, cucumber, lemon / lime and
granny smith apple as these are all very low
in sugar and produce a lot of juice.
The
apple trees were pretty bare at this time of year, but we still picked a few pounds of pippins, red delicious, rubies, and
granny smiths, all of which ended up
in a pie I made later that night — JUST CALL ME QUEEN DOMESTIC.
