I roasted the beets ahead of time and used Costco's refrigerated ruby
red grapefruit sections and bought one grapefruit to use for the zest.
package mixed salad greens with 2 cups each refrigerated unsweetened
pink grapefruit sections and diced avocado, 1/2 cup sweetened dried cranberries, and 1/3 cup bottled poppy seed dressing.
In a large mixing bowl, add the spinach / arugula blend, and toss in
the grapefruit sections, yellow pepper, celery and pistachios.
Spoon 1/4 of
the grapefruit sections around each portion.
Add
the grapefruit sections and mint and gently toss.
Then, scrape out
the grapefruit sections.
Just cut
the grapefruit sections into one bowl and the orange sections into another.
On each of 8 (8 - inch) dessert plates, arrange 6
grapefruit sections and 6 orange sections in an alternating pattern around plate.
Combine the fennel strips,
grapefruit sections, and avocado cubes in a bowl and add the desired amount of dressing.
