Note: Whenever I make a recipe where excess moisture is undesirable, I often use old cheapo canned
grated parmesan instead of the good stuff.
I made this the laziest way possible last night — used two bricks of frozen chopped spinach, 2 % milk instead of cream or stock (had neither handy) and shredded «Italian blend» cheese plus
some grated parmesan instead of swiss cheese (also had none).

I've made this as written, but last night I added some chopped chicken (from a store - bought roasted chicken) and used
grated parmesan and romano cheeses
instead of cheddar.
We've kept this dish vegan but if you are not vegan you probably don't have nutritional yeast at home and in that case you can just
grate vegetarian
parmesan or pecorino

Grated parmesan cheese — 1 cup (you can use regular processed cheese
instead, but for the authentic Italian flavor, you have to get hold of Parmigiano - Reggiano
I was too lazy to
grate parmesan so I tossed in about 2 tsp of tahini
instead and it was so good I wanted to eat it all in one sitting!

Food processors are also excellent for

grated romano or
parmesan instead of salty but otherwise bland Kraft - in - the - green - shaker - can?
