Anything that is heavy on paprika is a win in our house and add a
little bit of mint in there and you have the base of a
great dish.
This Parmesan Crusted Fish with Lemon and Capers is a very simple
dish, and
great for your
little ones too (they may question the capers, but try anyway, ha ha).
This is such a
great meatless
dish, but you could also easily add ground turkey or chicken to your enchilada mixture which is probably what we'll do next time since the hubby loved these and wanted a
little more protein!
I still think the ingredients have
great potential, and I certainly like the ease of preparation of the
dish, so I'll probably give it a second try and play with temperature and time a
little more.
Soup aside, the oil is also
great drizzled on just about any kind of egg, over tarts, on potato
