I'm glad I could inspire you to give chili another chance - I'm sure you could come up with a
great version full of veggies (and then I can add your recipe to my list of
vegetarian chilis to try!).

I have also made this cheesecake with vegan cream cheese and soy milk with
great success (for occasions where there is a dairy allergy)- the pumpkin and spices make the
vegetarian version still very good and creamy.
We often prepare this for the rest of the family and make a meatless
version for ourselves (this particular recipe is
great with black beans if you're also
vegetarian!).
That's what I walked away with after Lisa made this
version of Pad Thai from Almost Meatless, a
great cookbook to give those in your life who are trying to eat less meat but can't quite, or don't want to, go
vegetarian.
It's so
great that they serve it apart from the normal and
vegetarian version!
