We used fresh
green oak leaves for our project — it was fun being able to transform them into an autumn craft / learning activity.

Use interesting
greens, from romaine and iceberg (not so nutritious but a great crunch) to

leaf, lolla rosa, bibb and even microgreens (tiny baby
leaves) or sprouts.
Mixed
greens can provide calcium, iron, potassium and B vitamins for your diet, depending on your selected mix of lettuce and other
greens such as chard, romaine or
oak leaf lettuce, endive, arugula, chicory or radicchio.
And, yes, I do have to incorporate all kinds of «faux» Fall
leaves because, yet another reality is, we live in Florida where the
leaves either stay
green year round or the
oak trees go from
green, to brown, to on the ground within what seems like 24 hours.
The scarlets of the red maples were dominant, but they were being joined now by the greenish yellow
leaves of the red
oaks; the silver of the bigtooth aspens; and the
greens of the quaking aspens, the birches, and the beeches.

leaves, and a couple of acorns that look like they're wearing winter hats!
