My salad
dressing skills are almost nonexistent as I favour spritzing some fresh lemon juice and drizzling a bit of
olive oil over my
greens.
For the roasted beets: red and gold beets,
olive oil, salt and pepper For the mustard
dressing: Dijon mustard, horseradish mustard, agave nectar, Worcestershire sauce, and
olive oil; For the salad: mixed
greens, roasted beets, blueberries, mustard
dressing
Kalamata
olives plus red wine vinegar, garlic, and fresh parsley add up to a bold
dressing that complements the assertive
greens.
I also love to drizzle them with
olive oil and vinegar (or bottled Italian
dressing)-- seasoned
green beans taste outstanding!
I toss these on top of some wilted
greens, risotto, slices of avocado, or (if it's a Sunday) buttered toast — Your carrot / harissa salad, with feta and mint, or some variation of shredded veggies and this same general
dressing (broccoli stems, cabbage, etc)-- Lots of salads with lemon / garlic /
olive oil vinaigrette, feta, almonds or nuts.
When I lived in Athens as a teen ages ago, all the tavernas (small rustic restaurants) had an alternate salad of finely shredded
