I think my mom has a recipe, but the
salad layers goes something like this: lettuce, red and yellow bell peppers, eggs,
green peas, red onions, celery, Ranch dressing, cheddar cheese.
For our Asian
salad we used
greens, shredded carrots, sugar snap
peas, seeded tangerine sections, and toasted almonds.
Salad: 2 cups fresh corn or frozen corn, steamed 1/2 cup tomato, diced 1/2 cup
green peas or shelled edamame, steamed 1/2 cup red, orange, yellow, or
green pepper or any combination, diced 1 tsp fresh herbs of your choice, such as cilantro, parsley, basil or shiso (Japanese basil), chopped Salt and pepper to taste
Also, I love my particular mix of
salad greens with Italian parsley, arugula and
pea shoots.
Place all of the
salad ingredients (
green beans, black beans, kidney beans, garbanzo beans,
peas, corn, and onion) into a large bowl.
For some fresh
salad ideas for everyday meals, venture beyond
greens and look for inspiration in underutilized ingredients like farro, couscous, bulgur and pearled barley; lentils, beans and chick
peas; shrimp, smoked trout and canned tuna.
Not too long after my
