My takeaway... A small mixed
greens salad each night with dinner is probably beneficial to our health, but a massive greens salad 2 or 3 times a day, every single day is probably too much and may cause problems with too much oxalic acid.

Round off the meal with a
green salad or some glazed carrots and you're set for the
night.
I made this
salad last
night (subbing walnuts for the hazelnuts, swiss chard for the beet
greens, regular broccoli for the romanesco, and omitting the grapes).
These would make a great brunch along with a simple
green salad or cup of soup — or even a light dinner on those
nights you want to keep it simple.
A few evenings ago, I grated too much beetroot for a
salad I was making that
night, so I popped the extra grated beetroot in a tupperware and threw it in my noodle
salad the next day along with some
greens and mushrooms (I was so hungry that day I didn't manage to take a photo).
In addition, you should make the wild rice the
night before and refrigerate it overnight so that the hot wild rice can not wilt your
greens when you toss it in your
salad bowl.
The next evening we enjoyed the fresh spring
greens and crisp kale in a
salad that paid us well for our hard work the
night before and reminded us of a promise to enjoy this summer more than any other.
