This warm lentil salad recipe combines green lentils, fennel, sweet potatoes, and balsamic vinegar, all paired with
griddled halloumi.
Kipper had hers just with butternut squash and
griddled halloumi, while DH and I added salad leaves and fresh salsa too.
Griddling the halloumi is optional but there's nothing better than a warm slice of halloumi with crisp griddle marks.

Place your
halloumi in a really hot frying or
griddle pan, and give the slices a minute or so on each side.
