We recently enjoyed it alongside a
piece of wild caught
salmon,
grilled to perfection.
Then just shred the sprouts (some stores have bags
of shredded brussels sprouts), slice some green onions, a little red bell pepper for color, toss in some chopped peanuts, top with a
piece of grilled salmon and your good to go.
But if you want something a little more substantial for dinner, then a
piece of grilled salmon or chicken makes a nice add here.
This was dinner the other night, along with a
piece of grilled salmon, and then lunches the next day.
Cook's Tip: Make this salad your own by changing up the potatoes to little red ones, or using white kidney beans in place
of green beans, serve with a
piece of grilled salmon and try chunks
of Feta with the dressing.
I can just imagine spooning this onto a lovely

of brown rice and 2 kiwi fruit.

This salad is perfect as a side dish, but it's also really great with a
piece of grilled wild caught
salmon on the side (roasted or
grilled chicken is great too).
I love to add a simple
piece of grilled wild - caught
salmon on top, but
grilled shrimp or chicken is great, too.
All that's left for me to do is throw a good source
of protein on the side, such as
grilled chicken, a juicy beef patty, a few tasty meatballs, some delicious braised meat, a few slices
of leftover roast, a handful
of cooked shrimp, a
piece of grilled salmon, some scotch eggs (or even plain hard boiled eggs) or, if I'm really in a pinch (or caught completely unprepared) canned tuna fish.
I'll be having a special thought for you tonight as I sink my teeth into a delicious
piece of grilled salmon, topped with a creamy lemon, caper and dill sauce.
Place the foil packets on the hot
grill and cook for 10 minutes for a 1 - inch thick
piece of salmon.
At lunch, have
salmon with
grilled vegetables and another
piece of fruit, or a chicken breast salad with walnut
pieces and a
piece of fruit.
