Is it just best to make my own whole grain flour by
grinding wheat berries?

wheat, dehydrate it, and
grind it... than to buy sprouted
wheat berries or flour.
Those with mild sensitivities to gluten may have luck eating this ancient grain as
berries or
ground into flour because it contains a different genome of gluten than modern
wheat, and it has not been much changed by selective breeding over the millennia (note: spelt is not genetically engineered — a completely different process from selective breeding).

Another option is to dry sprouted
wheat berries in a low - temperature oven or dehydrator, and then
grind them in your grain mill and then use the flour in a variety or recipes.
In addition, traditional populations used older, unmodified strains of
wheat and utilized stone -
ground whole
wheat berries rather than refined white flour.
Look for «unbroken» foods; such as brown rice,
wheat berries, stone -
ground wheat, steel - cut oats, whole barley, or millet.
But the answer to your question is yes,
grind your own
wheat berries.
After the sprouted
wheat berries are dry, store them in an airtight container in the refrigerator, or
grind immediately and then freeze the sprouted flour.
An intact grain, such as brown rice kernels and
wheat berries, are healthier than those grains
ground up into flour..
Of course, if you don't have the resources to
grind your own
wheat berries, you can buy store bought whole
wheat flour as well.
I first prefer
wheat berries to already
ground wheat flour (but either are fine).
I like to
grind them with my
wheat berries and use them whenever I'm using whole
wheat flour in a recipe just to up the nutritional value a notch when I'm baking.
I found uncle sams whole
wheat berry and flaxseed cereal, but the flaxseed is whole, and it appears that you need to eat freshly
ground flax seed to get all the health benefits.
The only way to get all the nutrients is to eat the whole
wheat berry or seed... or
grind it yourself.
