ground meat substitute, or you can use ground seitan / wheat meat, or ground chicken or turkey in place of ground beef.

ground elk is amazing for these meatballs but you could
substitute it for another wild
meat like venison, bison, boar or even beef.

Substitute kale, broccoli rabe, or broccoli for the escarole.
Instead of
substituting (I'm not sure what would work for sure) I think your best best is to use fattier
ground meat (perhaps a combo of 80 % beef and some pork or lamb) since fattier
meats are better for binding.
We only rarely eat red
meat at home, so I often

meat companies because it wants to grow entire, recognizable, three - dimensional
meat parts, i.e. chicken legs, thighs, breasts, bones and fat (even leather, eventually); whereas all other cultured
meat research has focused on
ground beef
substitutes, like hamburger patties.
