Add the
ground turkey, season with salt, pepper and nutmeg, then
cook until the meat has browned and starts to stick to the bottom of the pan.
Once the
ground turkey is
cooked through, add pasta, low - sodium chicken broth, and enchilada sauce to pan.
I used
ground turkey instead of beef and

If you
cook 1 lb of
ground turkey and 1 1/2 cup of sweet potato, you will have 1 cup for serving.
Next time I'm going to
cook the sweet potato and
ground turkey separately so it won't overcook the meat.
While the peppers are baking, heat skillet to medium - high heat and saute onion and
ground turkey until onions become transparent and meat is
cooked through, remove from heat

I make
ground turkey tacos (I use
ground breast meat), that I
cook with a red onion (I know, I probably lost you right there), taco seasoning mix and pace picante.
Sweet potato skillet (1 pound
ground turkey, beef, or leftover chicken plus 2 - 3 white sweet potatoes shredded or sliced and
cooked until crispy, and a steamed vegetable such as green beans or broccoli).
You don't even have to brown the
ground turkey — it
cooks in the tomato sauce!
Add the
ground turkey and continue to
cook for another 6 - 7 minutes, stirring to
cook evenly and breaking up the meat until the meat is
