In this recipe I use
ground turkey to
keep this meal on the lighter side, but you could use
ground beef to give is a heartier flavor.
I
kept these Cheesy Black Bean and Corn Enchiladas as a vegetarian recipe, but if you had some precooked shredded chicken or
ground turkey in the freezer, that would be a great addition as well.
Some
ground meat (chicken,
turkey, bison, beef) with the right seasoning (we cheat and use a packet but I've been meaning to mix some up to
keep on hand) and a choose - your - own toppings salad with the best greens I can find; chopped sweet pepper, onion, tomato, and avocado; my husband's favorite salsa; and optional shredded cheese or sour cream.
I try to
keep fish (and shrimp, always shrimp) on hand in the freezer - just as I might chicken or
ground turkey / beef.
There is so much you can do with
ground turkey that it's a good idea to buy more than 2 pounds and
keep some on hand.
A typical full day of eating for me looks like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (
turkey burger, pulled pork, chicken thighs,
ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or
keep the snack and omit a meal, if i do that though I would add a bit of protein with it.
The recipe calls for
ground beef, but you could also use
ground turkey, chicken, or
keep it vegetarian.
In the effort to
keep things light yet satisfying, I used a lean
ground turkey bulked up with sliced mushrooms.
To
keep it moist and flavorful (since
ground turkey is known for being pretty bland), I added sauteed vegetables to the meat mixture before making the patties.
There are two keys to
keep ground turkey burger patties juicy and moist: 1) Use combination of dark and white meats: I don't use all white meat for burgers but but combination of dark and white freshly
ground turkey.
Extra lean
ground turkey paired with spicy Italian
turkey sausage and whole wheat pasta
keep this meatball - centric meal healthy.
Keep in mind that
ground turkey, beef, pork or fresh sausage will all work nicely in the recipe.
Finely chopping veggies and incorporating them into the
ground turkey will help
keep the burger moist and tender.
