The base is a
mixture of fresh or dried peppers,
ground walnuts, breadcrumbs and olive oil.
Add mushroom
mixture, freekeh, oats, beet, mayonnaise, soy sauce, salt, pepper, and garlic to
ground walnuts; mix thoroughly to combine.
Add the flour to the remaining 5 cups of coarsely chopped
walnuts and
grind that
mixture to a powder.
- Form this
mixture into a semi-solid shape (rubber gloves help)- If it doesn't hold form, add more
ground walnuts to further bind it.
Add
ground -
walnut mixture and beat just to blend.
Different variations can be made on the breadcrumbs
mixture too: add vanilla instead of cinnamon, add
ground walnuts, whatever you think you will like best.
It's totally optional, but I find that it brings out the seasonings, gives the «vegan
ground beef» the right consistency, and helps with browning so the cauliflower -
walnut mixture looks and tastes just like cooked
ground meat.
So I chopped them up and threw them in the food processor with some
walnuts, and after a few pulses, the
mixture actually resembled
ground beef.
