Before we get into the actual recipe, let's talk
guac for a second.
Ask to have the rice cooked without extra lard or oil, and top it with salsa or a little
guac for some added flavor.

When I realized we had all the ingredients
for guac anyways, I went ahead and used them to inspire my new recipe.
Made it
for St. Patrick's Day Irish Nachos, basically waffle fries with nacho fixings: chili, queso,
guac, olives, etc..
Unfortunately we only had one avocado and I didn't want to make a batch of
guac that wouldn't even satisfy me enough
for a snack!

For the
guac, mix the smashed avocado together with juice of 1/2 a lime, handful of chopped cilantro, 1 minced garlic clove, and salt & pepper to taste.
We're on GAPS so no grains
for us, I served it on a bed of organic lettuce with homemade sour cream, homemade salsa, and the homemade
guac, and with some yummy sauteed organic fajita veggies.
First, I ate nachos
for two days, then I ate this soup
for a week straight, then I made some weird chili powder - spiced tofu + black rice + broccoli + onion thing with homemade
guac and salsa and shoved it in tortillas (super random but very good, FYI).
let's be honest, i can't even imagine myself shoveling
guac into my mouth with a spoon; so if it weren't
for those greasy little fried tortilla chips, i probably wouldn't even be tempted by the guacamole in the first place!
A delicious dip is always a good idea
for a potluck, plus you can enjoy the best of both worlds with this Hummus and
Guac combo.
Oh, and if you're looking
for a fun chip to serve with the
guac, I served mine with these high protein quinoa chips that I found at Whole Foods.
Rather, make it in non-shared equipment so we don't rack our brains avoiding
guac that may have been processed in shared machinery, and look
for guac that was made in exclusively GF machinery.
I've been wanting to make some easy fish tacos
for ages and these seem pretty close to what I was imagining... I would definitely just slice the avocado rather than making
guac.
We put the salsa &
guac on our salad and quesadillas, but couldn't eat much as we were full from the mushroom dishes & wanted room
for dessert.
They're made out of an activated maize flour and were so crunchy, making them perfect
for scooping up
guac!
I made a pot of turkey sausage chili this week, but I love a good hearty vegetarian chili since we eat vegetarian most of the time... this chili looks perfectly cozy
for these frigid temperatures we've been having here lately... ditto on the fries and
guac!
Skip the tortilla strips and loads of cheese, and ask
for the
guac on the side.
Two things I've taken to doing in my
guac prep: 1) mixing the onion with the lime juice and letting them macerate
for some minutes before mixing in the rest 2) adding orange juice concentrate.
Clearly,
guac and smoothies are great and I'm happy to use up by slightly past prime avocados in those types of recipes, but I'm always looking
for a way to use up ALL my avocados.
I usually go
for homemade simple
guac and a salsa spread of pico de gallo, chipotle salsa and a hatch green chile salsa verde.
Tip: make a separate guacamole dish
for the kids if you plan to make this adult only
guac.
This was amazing,
for both lunch and dinner — the
guac really adds the magic touch.
We shared pomegranate guacamole to start, Nick ate the chips, I just forked the
guac, it was yummy, I kept searching
for the pomegranate seeds, and stealing them all!
For today's
guac, I opted to add in sunflower seeds, bacon, goat cheese, and black olives.

I was originally just going to do a basic avocado sweet potato toast
