Using a
handheld electric mixer, cream the coconut milk fat, 1 tablespoon of coconut water, powdered sugar, and vanilla extract
on high speed for 1 - 2 minutes, or until light and fluffy.
Beat the butter, brown sugar, and granulated sugar in a stand
mixer fitted with the paddle, or in a large bowl with a
handheld electric mixer,
on high speed, until light and fluffy, about 3 minutes.
