I have two eggplants waiting to be roasted tonight, so I think I'm going to make my own variation with
brown rice pasta and goat cheese that I have
on hand.
I went with a simple spelt - base noodle that I had
on hand, but you could also do buckwheat soba, edamame / mung bean fettuccine,
brown rice noodles... spiralized raw zucchini even!

I didn't have any garbanzo flour
on hand, so experimented with substituting 1/2 cup quinoa flour and 1/4 cup
brown rice flour.
I know it's silly but my guy is refusing to eat anything
on a spoon, he only wants foods he can pick with his

rice so I used the arborio and it came out crunchy I have used this
rice when making
rice pudding and risotto previously and never had a problem but I guess it just wasn't cooked long enough.
These cookies are a wonderful idea, and I made just a few adjustments: used
brown rice syrup instead of maple because it's what I had
on hand, added some shredded coconut, and added some extra ginger.
