Full disclosure - I cheated and used the pre-grated
hashbrowns in the refrigerated section instead of parboiling and grating the potatoes as indicated in the recipe.

They're crunchy on the outside and
hashbrown like
in the middle.
Just a tip: if using ffresh shredded potatoes, they have a lot of water
in them so press them against a colander or strainer before you use them (just like when making fresh
hashbrowns) to get all the water out.

hashbrown casserol that I pulled together the recipe for from other places... and it is a perfect addition... you can have anything else you want; ham, bacon, eggs, bisuits or toast... all is good together... but, we only do this once or twice a year... really good!
The variations are pretty infinite: you could divide the dough into 3 or 4 pieces and make small little pizzas (5 - 6 inches
in diameter, 1 egg each) to serve alongside fruit or
hashbrowns or something, or you could make one giant pizza and top it with 4 or more eggs to feed a crowd (if you are going to double the recipe, I would still recommend making two pizzas, as it might start getting out of control size-wise).
Breakfasts I have served are pancakes (mix the dry ingredients
in a freezer bag, writing what we ingredients to add on the outside of bag),
Hashbrown - Sausage - Egg Foil Packets, and eggs with bacon or sausage served with muffins baked ahead of time.
I heard you can throw a whole slew of things
in a waffle maker and it makes the crispiest
hashbrowns!
