'm a huge fan of Wagamama including their
vegan noodle soups and the
curry dish in the UK, they also
have Wagamama in Boston (I wish it
is available nationwide in the U.S.).
I LOVE Indian food so very much but I
've been trying to go
vegan so I gave up my chicken
curry days.
We
've both
been vegan for a long time now — over 10 years — so I
would say that we
've probably settled into a routine of our favourite dishes during the week — fajitas, spaghetti bolognaise, stirfry, risotto and arancini balls, roast dinner, peanut butter

While he loves
curry dishes, I didn't know if he
'd go for a
vegan soup for dinner so I made it on a night he wasn't home.
Also, the staff
is super knowledgeable about why certain dishes aren't
vegan (the panang
curry has shrimp paste that can't
be left out).

was inspired to put together a
curry dish that could work for the college students in my life with limited time who
are trying to create good
vegan meals in dorms, apartments, or kitchens that may also
have limited tools.
this
curry is a one size fits all kinda recipe, it
's gluten free and
vegan, although it
's not a typical plant based recipe everyone
would recognize at first sight.
