I made it pumpkin spice - ish by
adding hawaij (a Yemeni spice blend which is like pumpkin spice amped up with cardamom and ginger).
A recipe
for Hawaij (hawayij or hawayej) Gingerbread Men.
It turns out there are two versions
of hawaij, a Yemeni spice blend, that are used in both coffee and soups.
And it's spiced
with hawaij, a yemeni spice blend made up of ground cardamom, ginger, clove, cinnamon and nutmeg.
It's a word my auto - spell check hates (turns out my spell check loves hawaii not
hawaij which has made writing this post rather frustrating) and it is...
My sweet and talented friend Molly Yeh posted some gorgeous
hawaij coffee doughnuts last week.
We came across a lot of interesting recipes
incorporating Hawaij, including donuts, snickerdoodles and ice cream -LSB-...]
If you can't get your hands on store -
bought hawaij, I recommend substituting with a simple homemade combo of ground turmeric, ground cumin, freshly ground peppercorns and cardamom - grind everything with a mortar and pestle.
Mix hawaij, garlic, yogurt, and a big drizzle of olive oil (2 - 3 tablespoons) in a large bowl until smooth; season with salt.
There's cocoa, pumpkin, a spice blend
called hawaij (cardamom / ginger / nutmeg / cloves / cinnamon), a touch of almond butter and coconut cream, dates and hot water.
and then in the fall morning light, over salad and tahini and coffee laced halva and
hawaij laced coffee, i unpacked and repacked all of my most favorite memories from the past two weeks into imaginary little jars that i will keep forever and ever:
BTW, I also added in
some hawaij spice and a little amba spice.
∗ ∗ For
the hawaij: simply mix together 1 tbs cardamom, 1 tbs ginger, 1/4 tsp each of cloves, cinnamon and nutmeg.
In a medium bowl, whisk together flour,
hawaij, espresso powder, sea salt, cream of tartar, and baking soda.
You can prepare the topping while the dough is freezing by mixing the sugar,
Hawaij and instant espresso powder together in a small bowl.
Not only can you add
Hawaij to your coffee, but now you can also add your Hawaij - spiced coffee to cookies!
If you've never heard of
Hawaij («huh - why - edge»), that's ok because I certainly hadn't either until I stumbled across it on Molly Yeh's blog where she presented us with some hawaij - coffee donuts.
This recipe includes both brewed coffee and instant espresso powder for a caffeinated coffee kick, while
the hawaij is wonderfully warming.
As I learnt from my friend Molly, there is
hawaij that is used for soups, stews, marinades etc (like NY Shuk's) and then there is another hawaij spice which is a coffee blend.
Before my friends NEW YORK SHUK gave me a bottle of their new spice
Hawaij, I had never heard of this little known Yemeni spice before.
