Hi Ella I am dying to make a
healthier version of a blueberry
muffin but I really don't
like bananas.
I don't know what I
like better about these
muffins: their taste, their crumb or their hue or their
healthy appeal.
Our family loves these
muffins and I
like to keep a few in the freezer to grab on my way out the door so the kids have a
healthy snack to enjoy on long car trips or busy mornings out.
This recipe is all about getting
healthy ingredients,
like almond milk, unsweetened apple sauce, and olive oil, but these
muffins certainly don't taste
like cardboard!

To be honest I'm not going to lie and tell you it's
healthy or anything crazy
like that, but some times (maybe a special occasion), you want a treat here and there, and I will say that it is smarter to eat a «Paleo»
muffin made with ground almond and honey versus some cupcake you buy at Walmart that's loaded with sugar, and also contains artificial sweeteners and color additives.
So... I've been feeling a bit guilty about the accolades I gave to last weeks VGFH
muffins... I'm not sure they are very good, maybe more
like good - for -
healthy, I need to tinker with the recipe and feel
like I may have misled you.
Just
like their more understated sister
muffins, these vegan chocolate banana
muffins are a great option for
healthy snacks and breakfasts.
Now, cranking up the oven for these delicious and
healthy muffins, might not sound
like the thing to do on a steamy day, but trust me, they are worth it!
I quite
like having baked goods for breakfast (a home made
muffin etc), even though they're often not that
healthy — these could be the solution to my «what to have for breakfast?»
I
liked the idea of cinnamon roll
muffins made of
healthy ingredients and low in fat, but wasn't sure these were it.
I wanted to keep the recipe

muffins are not very sweet (they are cake -
like only in texture!).
I have my own
healthy muffin version made entirely with a mix of grains
like oat bran and oatmeal.

muffins shout - out time because I think there's nothing
like a dream of citrusy

Combined with natural sweeteners
like pure maple syrup, banana and applesauce these
muffins have a sweet but not too sweet flavor while still maintaining their
healthy status.
Healthy fats are wonderful but I'd rather put them on top of my
muffin (
like peanut butter).
I think you have to go into it realizing that they are going to taste
healthy and not
like a white flour
muffin, but that being said, they are way lighter than any whole wheat
muffin I have made previously.
These little baked egg
muffins have become a little obsession of mine the last few months, especially since my kids
like them (not to mention, they are a good protein packed
healthy alternative to the same old after school snack).
Change it up with some
healthy recipes
like Turkey Spring Rolls, Turkey Quesadillas, Turkey Lettuce Wraps, Turkey Noodle Soup, Sweet Potato
Muffins, Cran - Apple Smoked Turkey Sliders, and there's plenty more out there.
But again, remember that,
like all
healthy baked goods, these
muffins are to be consumed in moderation.
My girls eat pretty
healthy breakfasts: eggs, toast, fruit, whole wheat waffles,
healthier cereal... so sometimes I
like to treat them with
muffins or a yummy bread.

healthy and a great grab and go breakfast or perfect snack and they are also delicious if I do say so myself.
