It's adapted from the cover recipe of the Nordstrom Family Table Cookbook and while I am sure the original
version is heavenly, I decided to lighten it up a bit by substituting whole milk for a portion of the
heavy cream and slightly reduced the amount of gruyere.
Feta cheese, along with tons of spinach and scads of herbs, means this green - packed
version of mac and cheese has plenty of flavor without a
heavy cream sauce.
In the traditional
version they use a buttery pastry for the rolls and then they fill them with a butter,
cream cheese, egg,
heavy cream and shredded cheese mixture, so that at the end they can roll them in more shredded cheese again.
Our healthier
version skips the
heavy cream and butter found in most recipes — saving about 160 calories and 12 grams of saturated fat compared to a traditional

Of course you can adapt this all kinds of ways, replace the
heavy cream for chicken stock to make a lighter
version of this stuffing, swap out the butternut squash for mushrooms, add nuts for crunch and flavor, use cornbread instead of the rustic bread featured in the recipe here, add in some wild rice.
In this case however, I substituted the traditional
heavy cream with canned full - fat coconut milk and the result was just as decadent as its dairy
version.
