Here in Scotland over the last few days there has been a mini heatwave, I say heatwave I mean its been surprisingly sunny and warm and I haven't wanted to put the oven on and these no bake white chocolate cranberry pecan bars were the perfect solution.

As I sit here and type, I am on vacation in Asheville, where we have had record lows and torrential downpours the past few days, my daughters have both been diagnosed with strep throat and HostGator has been crashing all day which means that people have been unable to access my site.

Even though the sun is shining here in NYC and the daffodils are poking their way up in the garden... this soup actually makes me want to hold on to winter for a few more days just so I can enjoy it's cozy warmth and nourishment!

But I'm not here to gloat, promise; I, too, was bone - chilled, quietly resentful of people anywhere that their face didn't freeze within half a block of their apartment and questioning all of the life choices that had led me to take up residence in such a place just a few days ago.

Since I wasn't serving a crowd when I made this, I cut a few small pieces each day in the morning to thaw in the fridge for us to eat for dessert after dinner, so even if you're not serving tons of people, this cake is great to keep frozen and take some here and there

As I rise out of the wrapping paper debris and general holiday craze and settle in to enjoy a few days off (without any big obligations), I decided that I should get back to posting here.

It is a balmy 34 ° C here (93 ° F) but Melbourne weather is a fickle lady and I know the rain is coming in the next few days accompanied by a temperature drop.
